Asian aubergines

A deliciously different side dish, or use it as the base for a vegetarian main course

A speedy way to cook aubergines without having to fry them in loads of oil

Ingredients

Serves 2-4

  • 50 ml soy sauce
  • 2 tbsp balsamic vinegar
  • 2 tbsp vegetable oil
  • 1 garlic clove, crushed
  • 2ch piece fresh ginger, grated
  • 2 tbsp runny honey
  • tiny pinch of chili flakes
  • 1 large aubergine

Method

Chop the aubergine into chunks and put in a shallow ovenproof dish. Next, make a marinade by combining all the other ingredients. Stir in the aubergine until each piece is well coated then set aside for 15 mins.

Cover the dish with clingfilm, pierce a hole in the top and cook on High for 10 mins. Stir well, re-cover and cook for another 3 mins until the aubergine is very tender.

Leave to stand for 5 mins before serving.

A Cook's Plot Tip

This tastes even better if made the day before and gently reheated in a covered pan on the hob.
