Light and lovely - this makes the perfect pud to finish off a special meal
This is a great dessert to serve after any special meal, but it makes an especially good alternative to Christmas pudding
Serves 4
Peel and core the pears and then simmer in the wine until soft (takes about 12 mins, depending on how ripe they are). Mash well with a potato masher. Heat the water and sugar until the sugar has dissolved, then stir in the lemon juice and rind and the liqueur. Add the cooked pears and set aside to cool, then mix in an ice cream maker for 20-25 mins if you have one. Alternatively, whizz with a stick blender and put in a freezer-proof box. Freeze for 2 hours, then stir well. Repeat after another 2 hours.
Take out of the freezer 5 mins before you are ready to serve, then scoop out into bowls and decorate with a mint sprig
You can make this without the alcohol - but it's much more special if you include it!
