Well, the blog has reached a milestone - it’s just had its first 1000 page views, which is fantastic! So I’ve made some Lemon Biscuits to celebrate - just what’s needed on a snowy day with the temperature stuck well below zero and a Force Nine gale blowing, as it is here today.
This is actually a recipe I invented when I was doing my cookery A-level at school - so, first made in 1982, it’s certainly stood the test of time.
Whizz the self-raising flour with the butter and a pinch of salt in a food processor until it looks like breadcrumbs. Stir in the caster sugar, sultanas, the grated rind of half a large lemon, egg and milk, then knead gently until smooth. Roll out and use a medium-sized cookie cutter to cut out about 24 rounds. Bake on two lined baking sheets at 170C (fan oven) for 15 minutes. Sprinkle with a little extra caster sugar as soon as the biscuits come out of the oven (optional - it makes them look nice, but it does also make them extra sweet), then leave to cool on a cooling rack.
