Strawberries with lime and amaretto syrup

A real taste of summer. So simple - and so delicious!

Not much can beat a bowl of perfectly ripe strawberries and and a spoonful of cream for pudding on a summer’s day. But this recipe elevates them into a pud that’s out of this world (if I do say so myself)!

Ingredients

Serves 4

  • 2 limes
  • 100g light soft brown sugar
  • 1 tbsp runny honey
  • 4 tbsp amaretto liqueur
  • 2 tsp whole peppercorns plus extra ground pepper to serve
  • 450g ripe strawberries

Method

Squeeze the limes and put in a small pan with 3 tbsp water, the sugar, the honey, the liqueur and the whole peppercorns. Heat gently, stirring occasionally, until the sugar has dissolved. Then bring to the boil and bubble for 30 seconds. Leave to cool for at least an hour (but preferably several hours). Remove the peppercorns with a teaspoon and discard. Halve or quarter the strawberries and arrange in 4 bowls, then pour the syrup over them and serve immediately.

A Cook's Plot Tip

I'm a great fan of almond-flavoured amaretto liqueur because as well as being lovely to drink, it's also a very useful ingredient for puddings (try splashing in a spoonful when you're making a dessert with chocolate in, for example). But brandy, sherry, madeira and even rum would all work well here too.
