Thermomix & Air Fryer

Blueberry Muffins

Fluffy and light, these are great at any time of day (including for breakfast!)

I recently bought a Cosori Airfryer and I absolutely love it. This is a great recipe to make in an airfryer - the muffins take just 12 minutes to bake and come out perfectly every time. But they can be made in a conventional oven too - bake for 20 mins at 180C (fan oven). The addition of ground almonds really helps to keep them soft and fluffy - I have my sister Philippa to thank for that idea!

Makes 8

  • 4 tbsp vegetable oil
  • 75g coconut yogurt (I used Skyr)
  • 1 egg
  • 2 tbsp milk
  • 100g golden granulated sugar
  • 25g ground almonds
  • 125g self-raising flour
  • quarter tsp bicarbonate of soda
  • handful fresh blueberries

First, preheat the airfryer to 160C. Meanwhile, mix together the oil, yogurt, egg and milk with a fork in a big bowl. Then very gently fold in the sugar, ground almonds, flour, bicarb and blueberries - don't overmix: stop as soon as everything is just combined. Spoon into muffin cases and bake for 12 minutes until golden brown and firm to the touch. Cool on a wire rack.

A Cook's Plot Tip

You can use other fruit in place of blueberries too - raspberries, blackberries, blackcurrants and even rhubarb all work well.
