Spinach, feta and pinenut fritters

Fabulous for a quick lunch, or make smaller fritters to serve as nibbles with drinks

These are super-easy and take less than 10 mins to cook in an airfryer (or just a little longer in a conventional oven). Serve them just as they are or with a dip as nibbles, or with a salad and crusty bread rolls for lunch (a green salad with walnuts works especially well with them)

Ingredients

Makes 6 large or 10-12 small fritters

  • Good handful of baby spinach
  • 50 feta
  • 25g plain flour
  • Good pinch of dried oregano
  • Half a clove of garlic, chopped
  • Small handful of pinenuts
  • 25g grated parmesan or cheddar
  • 2 eggs

Method

Stir all the ingredients together in large bowl, then mash the feta roughly with a fork against the sides of the bowl. Line the airfryer rack with a square of baking paper and drop tablespoons (for lunchtime fritters), or teaspoons (for smaller nibbles) of the mixture onto the paper, leaving a little space between them because they'll puff up as they cook. Cook at 190C for 9 minutes until golden.

Alternatively, cook on a baking sheet lined with baking paper in a conventional oven at 200C for 12 mins.

A Cook's Plot Tip

If you like, you can make these a day ahead and keep them in the fridge, then reheat them from room temperature in the airfryer for 2 mins (or in the oven for 5 mins) when you're ready to serve them
